Apple Crisp for One

Ingredients

Filling

  • 1/2 Honeycrisp apple, cut into thin slices
  • 1 Tbsp dark brown sugar
  • 1/8 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 Tbsp cornstarch
  • 1/4 tsp vanilla extract
  • 1/2 Tbsp melted butter

Topping

  • 1 Tbsp flour
  • 2 Tbsp old fashioned oats
  • 1/4 tsp cinnamon
  • 1 Tbsp dark brown sugar
  • 1 Tbsp butter, cold and cubed
INSTRUCTIONS
  1. For the filling, start by mixing together all the ingredients besides the apples in a bowl.
  2. Add the apples and cover with mixture. Set aside.
  3. For the topping, in a small bowl, mix together flour, oats, cinnamon and brown sugar.
  4. Add in cold, cubed butter and mix together with your hands so there are several clumps.
  5. Spray a small ramekin (I use coconut oil) and fill with filling mixture.
  6. Top with topping mixture.
  7. Bake at 350 for 30-45 minutes, until topping gets golden brown and filling starts to bubble out.
  8. Serve warm.

I love love love a good apple crisp. But sometimes you just want a bite of it, you know?

I'll share my incredible cranberry apple crisp next month, but for now, this is a mini take on it!

Top it with ice cream, cool whip or warm maple syrup.
