Banana Bread

Ingredients
  • 2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup mashed bananas
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup butter
  • 1/2 cup mini chocolate chips + more to sprinkle on top
  • 1/3 cup chopped pecans
INSTRUCTIONS
  1. Mix flour, baking powder, baking soda and salt together.
  2. Cream butter. Add sugar and cream until fluffy.
  3. Add eggs, one at a time.
  4. Add in banana and mix until combined.
  5. Slowly add in the flour mixture and mix until just combined.
  6. Pour batter into a greased loaf pan and sprinkle chocolate chips and pecans on top.
  7. Bake at 350 for 50-60 minutes. Turn bread halfway through. You want the top to be golden and a toothpick to come out clean.
* NOTES

Use a wooden spoon to mix the wet and dry ingredients.

Additional toppings: blueberries, walnuts, dark chocolate

Overview

A crusty outside, a baked, yet slightly gooey center combined with mini chocolate chips and chopped pecans. Banana bread heaven.

This is my Mom's recipe that I grew up with. If she baked a loaf, it never lasted more than a few days with my sister and I around. We would fight over who got the last piece. But my favorite piece of all? The end piece fresh out of the oven.
