Banana Pumpkin Pecan Bread

Ingredients
  • 3 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 tsp (generous) pumpkin pie spice
  • 1/2 tsp salt
  • 4 eggs
  • 1 1/3 cup sugar
  • 1/2 tsp vanilla
  • 1/3 cup canola (or vegetable) oil
  • 1/3 cup butter, softened
  • 1 cup mashed banana
  • 1 cup pumpkin puree
  • 2 cups chocolate chips
  • 3/4 cup chopped pecans
INSTRUCTIONS
  1. In a bowl, mix together flour, baking powder, baking soda, pumpkin pie spice, salt, chocolate chips and pecans. Set aside.
  2. In a large bowl, combine eggs, sugar, vanilla, oil and butter and mix until there are no clumps.
  3. Add in banana and pumpkin and mix.
  4. Slowly incorporate dry ingredients into dry and mix until batter is just combined (aka do not over mix).
  5. Spray 2 loaf pans and divide wet mixture evenly.
  6. Sprinkle more chocolate chips and pecans on top.
  7. Bake loaves at 350 for 45-55 minutes, or a toothpick comes out clean (might need an extra 5 minutes here or there). Around 45 mins, put a piece of tinfoil on top of the pans so the tops of the loaves do not burn.
  8. Let cool and enjoy!
* NOTES

*I used a combination of mini and regular chocolate chips. This was an accident, but a very good one at that.

You know how much I love my banana bread. So much so that I knew I needed to figure out a way to marry my favorite pumpkin bread with it.

And I did!

This bread is the perfect marriage of fall spices, a nutty pecan crunch and a hint of banana flavor.
