Cadbury Chocolate Chip Cookie Cake

Ingredients
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 3/4 cup sugar
  • 1 Tbsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 cups flour
  • 1/4 cup mini semi-sweet chocolate chips
  • 1/2 cup Cadbury eggs
INSTRUCTIONS
  1. Mix together butter, brown sugar, sugar and vanilla until combined.
  2. Add in eggs one at a time.
  3. In a separate bowl, combine baking soda, baking powder, salt, flour and mini chocolate chips.
  4. Slowly add to wet mixture and mix until just combined.
  5. Grease a round cake pan, tart pan (whatever you prefer) and pour mixture into it. Pat it down so that the mixture is evenly distributed.
  6. Place Cadbury eggs on top of mixture and lightly press them down.
  7. Bake at 350 degrees for 16-20 minutes. The top should be lightly brown.
  8. Let cool and enjoy.

Overview

My husband's favorite treat is a cookie cake. So when I got my third pack of Cadbury eggs (did I mention it's not even April yet?) I knew I had to incorporate them together.

This cookie, slightly underbaked, is gooey, chewy and the Cadbury eggs literally melt in your mouth. Plus, the touch of mini chocolate chips in the batter take it to the next level.

This would be a great dessert to bring to a spring or Easter event.
