Cranberry Harvest Bars

Ingredients
  • 1/2 cup butter, softened
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 1/4 cup + 4 Tbsp cake flour
  • 1 cup fresh cranberries
INSTRUCTIONS
  1. In a large bowl, add softened butter and sugar and mix with a hand mixer until light and fluffy.
  2. Add in eggs and vanilla and mix until combined.
  3. In the same bowl, add nutmeg, cinnamon, baking powder, cake flour and cranberries.
  4. Using a spoon or spatula, carefully incorporate dry ingredients into wet ingredients. Be very, very sure you do not overcombine.
  5. Line an 8x8 pan with parchment paper.
  6. Evenly distribute mixture into pan.
  7. Bake at 350 degrees for 40-45 minutes, or until the top starts to turn golden brown and toothpick in center comes out clean.
  8. Let cool and sprinkle with powdered sugar (optional).

Overview

It's cranberry season! I was so excited to find fresh cranberries in the grocery store again.

For those that may not know, my husband grew up on a cranberry farm in central Wisconsin and I've gotten to learn so much about the process of growing cranberries. It's truly fascinating. It's also fascinating the amount of Ocean Spray cranberry juice we drink in a week.

The farm has been family owned for 100 years and the recipe for these cranberry bars are based off of my husband's great-grandmother, Iris, who used to live on the farm as well.

They are chewy, loaded with warm, fall spices and have the perfect amount of cranberry tartness. Not to be bias, but these cranberry bars are really, dang good.

This recipe can feed a crowd and would be perfect for your Thanksgiving feast (or any feast for that matter).
