Flourless Zucchini Bars

Ingredients
  • 1 cup shredded zucchini (one small zucchini)
  • 1/2 cup cashew butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 3/4 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp Himalayan salt
  • 1/2 cup chocolate chips + a little extra for the top
INSTRUCTIONS
  1. Mix together shredded zucchini, cashew butter, egg, vanilla extract and maple syrup.
  2. Add in baking soda, cinnamon, nutmeg and salt.
  3. Lightly whisk in the chocolate chips.
  4. Spray an 8x8 pan with coconut oil and pour batter evenly into pan.
  5. Sprinkle a few more chocolate chips on top.
  6. Bake at 350 for 25-30 minutes, or until a toothpick comes out clean.

Every year my Mom has monster zucchini growing in her garden. She's known for her banana bread AND amazing zucchini bread. Seriously, Mom, you want to ship me a loaf?

Anyway, I always love to find a way to sneak in a little healthy with a little sweet and these bars are just the thing.

Despite being flourless, they are fluffy and moist. The chocolate chips add the perfect hint of sweetness.

I love to eat these right out of the oven, or cold out of the refrigerator. They are great either way.
