Fluffy Pumpkin Bars with Cream Cheese Frosting

Ingredients

Bars

  • 4 eggs
  • 1 cup coconut oil
  • 1 2/3 cup sugar
  • 1, 15oz can pumpkin puree
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon

Frosting

  • 8 oz cream cheese (room temp)
  • 1/4 cup butter (room temp)
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp pumpkin pie spice
INSTRUCTIONS
  1. In a large bowl, whisk together eggs, oil, sugar and pumpkin puree. Set aside.
  2. In a smaller bowl, combine flour, baking powder, baking soda, salt and cinnamon.
  3. Slowly add dry ingredients into wet mixture and mix until just combined.
  4. Spray a 9x13 pan with coconut oil and evenly disperse batter.
  5. Bake at 350 for 30-35 minutes, or until a toothpick comes out clean from the center.
  6. In a bowl, combine cream cheese, butter, vanilla, sugar, cinnamon and pie spice. Use a hand mixer to combine until there are no lumps. (You may want to add the powdered sugar 1 cup at a time).
  7. Once the bars are cooled, evenly coat the top with a layer of cream cheese frosting.

* Libby's has the best pumpkin puree in my opinion.

Seriously, I feel like these are a classic, fall staple that everyone needs in their life.

These pumpkin bars are ridiculously easy to make and you'll find yourself licking that frosting spatula one too many times. Or if you're my toddler, you'll just stick your entire hand in the bowl and frosting will end up on mysterious places like the lamp, the dog's tail, etc.
