Monster Red Velvet Cookies

Ingredients
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 2 Tbsp red liquid food coloring
  • 1 Tbsp vanilla extract
  • 3/4 cup cocoa powder
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup dark chocolate chips
  • 1/2 cup dark chocolate baking chunks
INSTRUCTIONS
  1. In a mixer, beat butter for 1 min.
  2. Add in sugars and beat together until light and fluffy.
  3. Add in eggs, food coloring and vanilla. Beat until combined.
  4. In a separate bowl, combine all dry ingredients.
  5. With the mixer on low speed, slowly add in dry ingredients. Be careful not to overmix.
  6. Fold in chocolate chips.
  7. Roll into 12, equal sized cookies and chill in the refrigerator for 2 hours.
  8. Bake at 375 for 12-13 minutes, rotating halfway through.

Overview

So... confession.

A weird pregnancy craving of mine as of late is a big ol' slice of red velvet cheesecake from the Cheesecake Factory.

This craving has yet to be accomplished, but I've been dreaming about it.

So that inspired this recipe. These cookies are monster in size, similar to my "perfect chocolate chip."

They are also filled with 3 different types of chocolate making it hard to only eat ONE cookie.
