PB Protein Bites

Ingredients
  • 2 cups old fashioned oats
  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • a dash or so of cinnamon
  • 1/2 cup mini chocolate chips
  • Optional: scoop of protein powder, chia seeds, flaxseed meal
INSTRUCTIONS
  1. Add all ingredients into a large bowl.
  2. Using a hand mixer, (trust me this is the easiest way to go) mix all ingredients together on medium speed until fully combined.
  3. Grab a standard cookie scoop and scoop mix into your hand.
  4. Roll in your hand until it forms the shape of a ball. If the mixture is sticking to your hands, lightly wet your hands in the sink before rolling.
  5. Chill in the refrigerator for 10 mins.

*Store in the refrigerator.

Overview

It's never occurred to me to share the recipe for these bites since they are so easy to make. Because I've made them so much, I feel like a robot throwing all the ingredients into a bowl and not reading off a recipe card. But lately, I've been making them for others and every single one has asked for the recipe. So, I felt like this would be great to share with you.

I basically lived off of these little bites in college. I remember walking to class on Bascom Hill in the dead of winter (if you've been to the UW-Madison campus you know I'm talking about) quickly shoving as many as I could into my mouth before a long day of classes. I also lived off these while I was breastfeeding (or in my case, pumping) with my daughter. When you have no time to sit down and eat a meal, these sure come in handy. I've also lived off of these (and so has my husband) during the football seasons. He would come home from practice wanting something healthy, yet sweet, and these were the perfect answer.

Nowadays, I have to hide them or else my husband AND my daughter (who am I kidding, AND myself) will demolish them in a day. They are THAT good. I hope you enjoy them as much as we do!
