Peanut Butter Nutella Crisp Bars

Ingredients
  • 2 cups peanut butter
  • 1 Tbsp honey
  • 4 Tbsp coconut oil (in liquid form)
  • 1/3 cup coconut sugar
  • 6 cups brown rice puff cereal
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup Nutella
INSTRUCTIONS
  1. Line a 9x13 inch baking pan with parchment paper. For thinner bars, use a larger pan. Set aside.
  2. Mix together peanut butter, honey, 3 Tbsp of coconut oil (leave 1 Tbsp for the chocolate layer) and coconut sugar until combined.
  3. Slowly add in the puff cereal until fully covered in mixture.
  4. Pour into pan and use your hands to pat down evenly.
  5. In a microwave safe bowl, add the Nutella, chocolate chips and 1 Tbsp coconut oil and microwave for 20 second intervals until fully melted and combined.
  6. Pour over the top of peanut butter cereal mixture and use a spatula to spread evenly.
  7. Refrigerate for 1 hour before serving (or until chocolate is set).
* NOTES

* Peanut butter cereal can lose shape easier when warm. I recommend to keep bars in fridge and take out 30 minutes prior to serving to let the chocolate soften.

Ok, so I love me a good scotcharoo. But I also like to add my twist in there, as you know.

So one day while I was aimlessly browsing through my pantry (I know you do it too) I spotted a jar of Nutella and it hit me. Nutella had to be worked into this decadent treat one way or another (says the girl that could eat it by the spoonfuls).

Whether you're a Nutella lover like me or not, you'll definitely fall in love with these bars. Did I mention they're NO BAKE?! Yep. Easy and delicious.
