Pistachio Torte

Ingredients

Crust

  • 1 cup flaked coconut
  • 1 cup flour
  • 1 stick softened butter (1/2 cup)

1st Layer

  • 1 8-oz package cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 12 oz tub of Cool-Whip

2nd Layer

  • 2 small packages Instant Jello Pistachio Pudding
  • 2 cups milk

3rd Layer

  • 1 cup toasted coconut
  • 3 oz chopped walnuts
INSTRUCTIONS
  1. Mix flaked coconut, flour and softened butter together until crumbly. (I used my hands and a quick zap of the mixer).
  2. Press into a greased 9x13" pan.
  3. Bake crust at 350 degrees for 15 minutes.
  4. Let cool and set aside.
  5. While the crust cools, mix softened cream cheese, powdered sugar and vanilla until well blended.
  6. Fold in 6 oz (1 cup) of Cool-Whip.
  7. Spread carefully and evenly on top of the cooled crust.
  8. Beat together milk and Instant Jello until thickened.
  9. Refrigerate for 30 minutes.
  10. Stir mixture again before carefully spreading on top of the crust and 1st layer.
  11. Spread 6 oz (1 cup) of Cool-Whip on top of Jello layer. Sprinkle toasted coconut evenly over the top and then the chopped walnuts.
  12. Refrigerate for a couple of hours before serving.
* NOTES

*To toast coconut, spread layer of coconut on cookie sheet. Bake at 350 degrees for about 5 minutes, or until golden brown. Be sure to watch carefully.

Overview

This is Vince's favorite dessert (maybe even beats his beloved cookie cake).

During the spring when the country shut down, we quarantined up in Wisconsin at my in-laws cranberry farm. Slowly as we approached summer, my mom came up for a *socially distant* visit before we left to go back down to Florida. With her, she brought her pistachio torte.

You guys, I've never seen something disappear SO fast. I'm not going to name names here, but the men of the house took that torte down! (I'd be lying if there wasn't a little help from the ladies...)

There's no better feeling than when you bake something and it doesn't last very long.

I'm not typically a pistachio-flavored fan, but this torte is my exception. The three layers in this dessert perfectly compliment each other. This is a great to bring with you to a summer BBQ, birthday party, bridal shower, or any time you need to feed a crowd. I hope you enjoy it as much as I do!
