Protein Packed Blueberry Lemon Muffins

Ingredients
  • Kodiak Cakes Lemon Blueberry Muffin Mix
  • Scoop of protein powder (see notes)
  • mini chocolate chips
  • 1/4 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 tsp cinnamon
  • 2 Tbsp cold butter or oil (I used hardened coconut oil)
INSTRUCTIONS
  1. Mix muffin mix and protein powder together until fully combined.
  2. Line a muffin tin and fill with batter.
  3. For streusel, combine dry ingredients and then add cold butter or oil.
  4. Mix with hands, leaving some big chunks.
  5. Chill in refrigerator until ready to use.
  6. Top batter-filled tins with chocolate chips and streusel.
  7. Bake at 375 for 14 minutes or until golden brown and a toothpick comes out clean.

I love the brand, Kodiak Cakes, and decided to put my own little twist on their classic muffin mix.

Topped with chocolate chips or my new favorite, almond flour streusel, these are perfect for that breakfast on the go or a quick snack. Either way, they won't last long.
