Pumpkin Choco Chip Cookies

Ingredients
  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 cup cold, unsalted butter (cut into cubes)
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg yolk
  • 1/4 cup pumpkin puree
  • 1/4 tsp vanilla
  • 1/4 tsp maple syrup
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup dark chocolate chips

INSTRUCTIONS
  1. In a smaller bowl, mix together the dry ingredients.
  2. Cube a cold stick of butter and put into a stand mixer. Mix on medium speed for about a minute.
  3. Add in brown sugar and mix.
  4. Add in white sugar and mix until light and fluffy.
  5. Add in egg yolk, pumpkin puree, vanilla extract, maple syrup and pumpkin pie spice. Mix until combined.
  6. On low speed, slowly add in dry ingredients. Mix until just combined (do not over mix).
  7. Add in chocolate chips and stir in with a spoon or spatula.
  8. Take a standard cookie scoop and drop two scoops of dough into your hand. Shape in hand and pinch at the top to form a peak.
  9. Drop cookie dough on lined cookie sheet. Do this until you have 6 cookies on your sheet.
  10. Bake at 400 degrees for 8 minutes, or until cookies are just slightly golden on top.
  11. Once out of the oven, I like to add a few extra chocolate chips to the tops of my cookies right away (totally optional).
  12. Let cookies cool on a wire rack.
* NOTES

*For more pumpkin flavor, add another 1/2 tsp of pumpkin pie spice.

Overview

Not to toot my own horn here, but my chocolate chip cookies are really good. Like, really really good.

So adding pumpkin to them freaked me out a bit. Pumpkin adds moisture, so you have to do a little playing around to make sure you get the texture and taste just right.

But it's almost September and I'm about to jump right into everything fall over here and I knew I needed a staple dessert for the next few months.

This cookie is gigantic, moist and filled with the perfect amount of pumpkin spice.
