The Ultimate Chocolate Chip

Ingredients
  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 cup cold, unsalted butter (cut into cubes)
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg yolk
  • 1 egg
  • 1/2 tsp vanilla
  • 2 cups chocolate chips
INSTRUCTIONS
  1. Mix together dry ingredients.
  2. Add butter to a stand mixer bowl and turn onto medium. Let the butter cream for about a min before adding the brown sugar.
  3. Mix everything and then add white sugar, mixing until light and fluffy.
  4. Add in the egg yolk, egg and vanilla. Be sure to use a spatula to scrape the sides of the bowl to allow everything to combine.
  5. Then, turn the mixer on low and slowly add the dry mix. Do not over mix.
  6. Add in chocolate chips and combine with stand mixer or a wooden spoon.
  7. Roll cookies out a little bigger than a standard cookie scoop size and pinch at the top so they stay tall.
  8. Bake at 400 for 8 minutes, or until the tops are just golden.
  9. Let cool on the pan for 10 minutes before transferring to a cooling rack.
* NOTES

Make sure to pinch the cookies at the top to form a small peak. That will prevent spreading in the oven.

You can double the size of these cookies for extra large 6oz cookies.
