Triple Chocolately Cookie Cake

Ingredients
  • 2 cups almond flour
  • 1/2 (heaping) cup coconut sugar
  • 2 tsp vanilla extract
  • 1/2 cup coconut oil
  • 2 eggs
  • 1/2 tsp baking soda
  • 1 tsp pink Himalayan salt
  • 1 cup dark chocolate chips
  • 1/4 cup mini semi sweet chocolate chips
  • Torani dark chocolate sauce
INSTRUCTIONS
  1. Mix together coconut oil and coconut sugar.
  2. Add vanilla and stir.
  3. Add eggs, stirring after each one.
  4. Add baking soda, salt and flour and stir until just combined.
  5. Using a wooden spoon, add in chocolate chips and combine.
  6. Pour into greased pan. (I love my Lodge skillet)
  7. Sprinkle some extra chocolate chips on top.
  8. Bake at 350 degrees for 22-25 minutes, or until cookie cake is golden brown.
  9. Drizzle with chocolate sauce and a scoop of ice cream.
* NOTES

*I used an 11" skillet. The smaller the pan, the thicker the cookie. You will have to adjust baking times.

Fun fact: Vince's all time favorite treat is a cookie cake. After every football season, he celebrates with one. Did you know they sell individual slices of cookie cake at the grocery store?! See I thought that was a good idea once to get him, but that's a 2 bite snack for Vince. So I learned my lesson. Either get the full cookie cake or none at all!
